Here we go again. Another day closer to the weekend.
Yesterday, I didn’t post at lunch because I was busy studying and didn’t want to get sidetracked -plus, it wasn’t very pretty. I brought leftover Faux Joes with some juicy strawberries.
A little while later, a guy showed up from Jimmy Johns with free samples. I was going to pass until he said he had a veggie…so I caved. It was only a two inches portion, I took a couple bites and threw the rest out. In this case, just because it’s ‘Veggie’ in no way means that it is healthy. This sub was loaded with cheese and mayo and was on white bread. The eight inch ‘Vegetarian’ sub has 578 calories, 30 grams of fat, and 52 grams of carbs. Yowzahs!
When I got home from work, I prepped the ingredients for dinner and then did Fire 45 with Ashley. A friend recommended that I make, Vegan Mac n’ Cheese from this website. I had all of the ingredients and I love Mac n’ Cheese so I thought I’d give it a try. Let’s just say it looked prettier than it tasted. While it wasn’t horrible…it was a bit odd. So, I am going to play with the recipe a bit and see what I can do to make it better before I do a recipe post.

A little while late while catching up on the shows I had on DVR, I had a major craving for ice cream. I scooped about 1/2 cup serving of Vanilla with fresh strawberries and a little chocolate sauce. Hit.The.Spot.
So, although I am seeing results when it comes to inches lost and I also had to buy a smaller size in jeans…the scale was not budging. It was getting very frustrating and I felt like those things would go hand in hand.
Well, this morning I weighed myself and finally it showed a two pound loss. this is the lowest the scale has been in a while. It felt great and gave me the push I needed to keep at this hard and stay motivated. I know the scale varies depending how much you eat and drink so if I had barley ate yesterday, I would attribute it to that, but I consumed a lot, so I am counting this as a victory!
