First of all, thanks for all the support from my last post. It’s not always easy sharing such personal things, but you guys make it easier knowing I have your support.
Since then, I have been focusing on myself and doing things in my life that make me happy. I am gathering clothes to donate, I created a budget, I am making time to meal prep and get workouts in and I am enjoying time with friends and family.
In April, my plan is to cut out a lot of social drinking. It makes for a rough next day and bad food choices. I have vacation number 1 at the end of May, so I really want to focus on myself and making sure I feel good when I put the bathing back on.
Yesterday, Ashley and I hosted Easter at our house. We made a wonderful spread of food that included a brown sugar dijon pork tenderloin, honey roasted carrots, balsamic green beans, a big salad with cranberries, sweet peppers and poppyseed dressing, mashed potatoes, cheesy potatoes and smoked paprika avocado deviled eggs.
Those deviled eggs were to die for. I used this recipe and I will definitely be making them again.
We had an amazing Blood Mary/Mimosa bar, too. So may options and garnishes. I stuck to mimosas with a mix of grapefruit juice and OJ with some blueberries!
I had such a good day hanging out with the family and enjoying the sunshine, dinner, golf and a little nap!
Food & Fitness Recently…
I have been so good about getting my workouts in lately. Whether its a DVD at home (I’m loving 21 Day Fix Extreme Cardio), lifting in the work gym, or going to Renegade, I have made a point to get in at least 5 workouts in the week. In april, I’m shooting for 6 days and some doubles. #gametime
Food is still not perfect, but I am also making an effort to get it cleaned up now that its really getting close to vacation. I am in the process of making a meal plan for April. Here are some meals I’ve enjoyed recently, that while aren’t super clean, were really good!
Sausage Alfredo with Spaghetti Squash – I don’t agree that this is ‘super healthy’ but it was delish. Instead of kale I used broccoli and chicken sausage.
Homemade Eggs Benedict that my sister’s boyfriend made us and it was heavenly!
Goat Cheese and Grilled Veggie Wrap – a F2BF favorite! (That original post is from 2011 – how precious!)
We went out for St. Patrick’s Day and had such a blast. We actually celebrated on three different occasions…. this is a judge free zone. 😉
I am hoping that April is pretty low key. I need to get my head in the game and really focus on losing this extra weight before I have to put a bikini on – and that is the motivation!
I will be back soon with an update.
I hope your Easter was fabuous!
