Meatless Monday

Hi Friends!

I had such a nice Monday! My workday was calm, steady and productive, I had a nice cardio sweat session, and after work, I made it to Ulta and the grocery store. I also whipped up some amazing veggie tacos with black beans for dinner.

For the tacos, I simply sauteed mushroom, green pepper, zucchini, onion, a hot pepper from my mom’s garden, broccoli slaw and fresh corn with Hot n’ Spicy taco seasoning and coconut oil.

blog1While that was cooking, I heated up some black beans to have on the side.

All plated together with avocado and tomato: 


I decided that even though I’m eating meat again, I really need to make it a point to make some meals all veg.

Later this week I’m planning to make The Fitnessista’s Zucchini Noodle Pasta with Cashew Cheese Sauce. Hello yumness!

Here’s my grocery store haul:


Some of the usual and also a few random grabs. Ezekiel bread was on sale for $3.50, so I snagged the only one left on the shelf – Cinnamon Raisin. I got more Rudi’s tortillas and wasn’t thrilled with that $5.50 price tag, but I really like them, so I went with it. The Larabars are for emergencies to keep in my desk at work and I’ve missed Greek yogurt, so I grabbed a couple of those, too.

I also splurged on some SO Delicious Mini Coconut Milk Ice Cream Sandwiches! Cannot wait to try these babies!

Other food for the week includes:

  • Shakeology
  • Salads
  • Wraps
  • Eggs with spinach
  • Cottage cheese
  • Fage Greek Yogurt
  • Bananas, Nectarines

On the fitness end, I’m planning on the usual, plus at least two morning workouts, and two days of doubles. Double days I plan to do a lift for one session and cardio for the other – both about 30 minutes each.



This morning was 21 Day Fix Lower Body and it was fabulous! I used 20 pound dumbbells for the majority.

    I am finding that I keep reverting back to 21 DF. I just really love it! Those tacos look super good and I waaaaaant even more because I’m doing the refresh! haha Keep me posted on the cashew cheese sauce; I’m hesitant to try any ever since I made a cheesy kale chip recipe with cashews and nutritional yeast. It was deadly gross.
