It’s been awhile since I’ve brought you a delicious recipe. Today, I bring you a super simple, quick, healthy and satisfying meal – I think that covers all bases!
organicgirl asked me to create a meal using their romaine in a grilled recipe and I created this awesome meal on a grill pan at home that could also be made outdoors and is great for Meatless Monday.
Here’s what you’ll need:
- 1 Package Tempeh, chopped into cubes
- 1/2 cup Franks Buffalo Sauce
- 1 T onion, diced
- 1 package organicgirl romaine hearts
- 1 T feta cheese
1.) Start by sautéing the onion in coconut oil until softened. Then add the tempeh chunks.
2.) Cook until the tempeh is browned on the outside. Then add in the buffalo sauce.
3.) Heat the grill pan, cut the romaine hearts in half, spray the pan with cooking oil and put the hearts face down.
4.) Remove and plate the hearts once they’re slightly browned.
5.) Top the hearts with the buffalo tempeh chunks and sprinkle with feta. Garnish with celery (optional).
6.) Serve hot and enjoy!
I loved this meal. But I love anything buffalo, so what’s not to love?!
I used the leftover buffalo tempeh and romaine in a wrap the next day for lunch – just as delicious!!
