How The Week Went Down

I’m beyond happy to say this…

TGIF!!! 

It has been a crazy, busy, productive, odd, week over here. My nights were jam packed with stuff, my workouts were all off (they happened just not the norm), and having a  snow day threw me off completely!

I’m leaving to see Dan in five hours and I can’t get on the road soon enough. Plus, we both took Monday off and I took a half day off on Tuesday. All weekend we’ll be celebrating St. Patrick’s Day, of course, but even more importantly, our one year anniversary!!! Seriously. Where has the time gone?

I’ll be back with a full recap of the long weekend on Tuesday!

For now, let’s take a look at how the week went down.

weekAs I mentioned, it was totally a weird week for me. I’m pretty used to my schedule being the same each week, so having a wrench thrown into things could’ve been an easy way to make excuses, but instead, I rearranged plans and made do just fine.

FOOD 

I’m officially obsessed with the egg pancake. I brought it for breakfast today, with blueberries and extra cinnamon, and omg, it is just the best thing, ever!

blog6The rest of the week included eggs with spinach, green protein shakes, salads and a yummy buffalo chicken salad quesadilla with roasted broccoli.

blog3For the chicken salad, I used:

  • cooked boneless, skinless chicken breast, shredded
  • 1/2 cup greek yogurt
  • 1/2 cup cucumber
  • 1/2 cup celery
  • 1 T buffalo sauce
  • 1 T ranch seasoning

Stir everything together and serve! So easy. :)

FITNESS 

blog2Ok, so in my original plan, I was supposed to go to Renegade three times this week. I made it once… However, I still worked out and got to hang out with ShaunT twice, which was fun! Monday night I did T25 and Wednesday, I completed Insanity, which I forgot was so intense! (Top right picture, 356 calories in 40 minutes, burn, baby, burn!)

I did lower body yesterday and am sore today, which I love! I’m heading into the fitness center at lunch to do arms. The plan for this weekend is some kind of cardio, circuit, HIIT, etc. Whatever I do, as long as I’m burning calories at some point will make me happy. I’d like to workout at least twice over the long weekend – that’s my goal!
