I made some good food this week. It helps that I actually shopped for specific items and stuck to my meal plan. Both of these meals were ridiculously easy, have potential to be vegetarian friendly, and are crazy good!
#1 Spicy Quinoa Taco Salad:
- 1/2 cup quinoa
- 1/4 pound chicken breast (I used cajun flavor)
- 1/4 cup Trader Joe’s Black Bean & Corn Salsa (or any chucky salsa)
- 1 T taco seasoning
- 1 T plain greek yogurt
1.) Cook quinoa according to package instructions. While it’s coming to a boil, cook your chicken, as well.
Note: I always pre-cook my chicken on Sunday, which saves me time. Also, omit chicken for vegetarian meal.
2.) Once the quinoa is cooked, add the taco seasoning and stir.
Ingredients: (Serves 1 hungry person or 2 people as a snack/side)
- 2 Portabella Mushrooms
- 1/2 cup pizza sauce
- 1/2 cup cheese
- desired toppings
- olive oil
1.) Cut off the stem of the mushroom, rub it in olive oil and lightly salt it, then put in a 350 degree oven for 8 minutes.
Omit sausage for vegetarian meal.
Other fun combos to try:
- roasted red pepper with artichokes and goat cheese
- chicken, banana peppers, feta with some bbq sauce
- caprese style
- bacon, red onion and gouda
