I was craving pork chops the other day and we always eat chicken, so I figured it’d be a nice change. Per usual, I hopped on Pinterest to see what I could find, but came up empty handed, so I headed to one of my next favorite spots; Rachael Ray’s website.
I found an awesome recipe that looked easy enough and didn’t require too many ingredients, which is a plus when cooking at Dan’s place since his kitchen isn’t stocked as well as mine at home. We both loved this meal and I’d totally make these again!
Boyfriend Approved, Pork Chops with Mushroom Sauce by Rachael Ray
- 3 tablespoons butter
- 8 ounces mixed wild mushrooms
- 4 bone-in pork chops — I used boneless
- Salt and pepper
- 1 large shallot, thinly sliced — I used onion
- 1/2 cup red wine
- 3/4 cup low-sodium beef broth
- 2 teaspoons dijon mustard
- 1 teaspoon fresh thyme leaves — I skipped
1.) In a large skillet, melt 1 1/2 tbsp. butter over medium-high heat. Add the mushrooms; cook, stirring, until browned, 6 to 7 minutes.
2.) Pat the pork dry; season with 1 tsp. salt and 1/2 tsp. pepper. Add to the skillet and cook, turning once, until the pork is browned on both sides and firm to the touch, about 8 minutes. — 4 minutes per side was perfect!
Review: As I stated above, these were so good and I’d make them over and over again. The pork chops were cooked perfectly (thanks, Dan!) and the sauce sounded like such a strange combination but worked flawlessly together. I’m not used to working with wine when cooking, so I was a little nervous about that, but it was a piece of cake! Seriously. Make this meal for your next date night. I give it an A+!
