Annnnnd we’re back.
What a weekend. We did a lot each day, which made it seem longer and not fly by, thank goodness.
Dan, Jason, Mandy and I all met up for some bowling! We got a few pitchers of beer and bowled four games. The first game, I had a 101, which is good for me! I think I’m getting a little better. We called it a night after that.
We slept in and when I woke up I was craving pancakes! I put a pot of coffee and College Gameday on and googled a flourless pancake recipe.
There were tons of recipes, but it was just blowing my mind that egg and banana as the basic ingredient would create a fluffy pancake, but alas, it did!!
- 2 jumbo egg, beaten
- 1.5 ripe banana
- 2 Tbsp natural peanut butter
- 2 Tbsp ground flax seed
- 1 Tbsp butter
I changed it a bit, but the directions for the recipe I used, can be found here. Dan and I ate them up – they were pretty legit!
We headed out for errands after we ate. Dan got a sweet new coat and I snagged a few clearance items at Old Navy. (PS, all of Old Navy’s active wear is going to be on sale, up to 40% off starting Nov. 1)
After shopping we popped in NJ’s to hangout, relax, watch football and enjoy a drink.
Mandy met up with us, as well, which was fun!
After a few hours, we headed back to my house, so we could get ready for Dan’s sister, Jenny’s, Halloween party!
I snacked on Buffalo Chicken Flatbread, chips and dip and this amazing pumpkin dip with graham crackers – yum!

We met up with some friends downtown after the party and stayed out until 2am. I haven’t seen 2:00 in forever, but it was a good time!
We woke up remembering why we don’t stay out until 2:00 anymore…
I took Dan to get his car and then came home and made breakfast for myself.
2 eggs with spinach and hot sauce + banana
I cleaned the house, showered, and headed over to his parent’s house where I made vegetable soup, which turned out amazing!
Later, we carved pumpkins and laid low in typical Sunday fashion.

They turned out great, I think!
By the time 9:00 rolled around I was more than ready for bed. I crashed and slept until the alarm at 5:50 – yuck!
After last weeks struggle with mother nature making me want every piece of chocolate out there – I’m so ready to get back to the grind this week. Meal plan and working schedule coming tomorrow….stay tuned!
