I made this dish last week and while it’s not healthy it is a better option than it super cheesy counter part.
You will need:
– jumbo shells (anyone know where to find whole grain?)
– pasta sauce
– low-fat cottage cheese
– frozen spinach
– part-skim mozzarella
1.) Preheat the oven to 350 degrees. Microwave the frozen spinach for 2 minutes so that its unthaws (be sure you put it in a bowl, so it doesn’t leak all over) and then dice the mushrooms.
2.) Put the spinach in a dish towel and squeeze all of the liquid out.
3.) In a bowl, combine the cottage cheese, mushrooms and spinach.
4.) Stir that all together and add the mozz cheese.
**I’m really bad about measuring, but I’d say this was about 1/2 cup of cheese**
5.) Once the noodles are al dente, drain them, let cool and begin to stuff them.
6.) Once they’re all full, top them with the pasta sauce.
7.) Put a dusting of cheese over the top.
8) Bake for 30 minutes or until the cheese is completely melted.
9.) Serve hot with a salad (so you don’t eat as many shells ;)) Mmm!
These were veggie stuffed shells, but you could easily add ground beef, turkey, or chicken to the mix. I didn’t miss not having the meat, though. Once in a while it’s nice to serve a veggie meal and Dan liked it, too! I think he said it’s the best meal I’ve made yet!
