Just when I thought Buffalo Cauliflower couldn’t get any better…
Cilantro ‘Ranch’ happened.
Oh shit, yes!
You will need:
– 1 head of cauliflower (or more if you’re serving more than
4 2 people – it’ll go quick!)
– your favorite buffalo sauce – I love Sweet Baby Ray’s
– greek yogurt
– packet of ranch seasoning
1.) Preheat oven to 375 degrees and cut up the cauliflower into bite size pieces.
2.) Cut up the cilantro and mix it with the greek yogurt and ranch pack. (I used 3/4 packet to 1 cup yogurt)
3.) Pour the buffalo sauce over the cauliflower, coat well (I shake mine in a bowl with a lid for ample coverage!) and then spread the cauli out onto a baking sheet.
Oh. My. Word.
4.) Bake in the oven for 30-40 minutes.
5.) Top with additional cilantro and serve with Cilantro ‘Ranch’.

I make this every week now. My dad loves it. I take it to Girl’s Night and I eat it with almost every meal – I’m obsessed.
I was prepping a ton of food last night and buffalo cauli was of course included.
– sautéed peppers
– hard-boiled eggs
– grilled chicken
– buffalo cauliflower
I spend a little over an hour on Monday nights meal prepping for the rest of the week. It makes grabbing food and making lunches much easier.
My morning snack was pretty fantastic. I was freezing and a cold apple sounded terrible. So, I decided to heat the little bugger up with some cinnamon and call it apple pie! I also had a handful of almonds.
I completed one day of clean eats, no cheats! Woohoo! I know as I cross each day off I’ll be feeling better and closer to my goal…just have to stick with it. I made sticky notes as reminders…
Yep. That is definitely happening.

I’d like to be semi-active on Sunday even if it’s just a walk or bike ride.
