I love cooking for Dan.
He’ll eat anything I make, he’s open to trying new foods and he enjoys healthy meals as much as I do. In fact, he requests quinoa more often than I suggest making it. This makes my life easier and my heart happy!
Anyway, last Friday when I was putting together our date night meal, I wanted to make something that was healthy, satisfying and delicious. I looked on Pinterest for a while and finally came up with a menu:
Parmesan Zucchini Crisps
Spinach Salad with Nectarine, Goat Cheese & Pecans
It was the perfect combination and everything turned out fabulous.
I started with the salad so that I could get it out of the way since it’s the easiest part. I simply threw the spinach in a bowl after washing and removing the stems, cut up the nectarines and added those along with the goat cheese and pecans.
It should be noted that this salad is SO good that I keep buying the ingredients and re-making it – I’m on day 5 of this combination!
I then started the Zucchini Crisps, which were super easy and I followed this recipe that I found on Pinterest.
The batch was almost gone before we even sat down!
For the fish, I used one of my favorite seasonings. I heated a skillet with olive oil in it, then coated the fish and popped it in the pan.
I cooked it for about 6 minutes on each side and it turned out perfectly.
