How’s your week?
Mine is going as good as it could – I’ve been busy, as usual.
I’ve been loving working out right after work and getting home no later than 6:45. It leaves me time to cook a nice dinner, shower, clean and prep everything for breakfast and lunch the next day. Tuesday night, Ashley and I made Spaghetti Squash ‘Pasta’, which I keep raving about and last night I made Spicy BBQ Chicken Strips with Parmesan Oven-Roasted Cauliflower.
It was literally the easiest meal, ever. So many people were asking for the recipe on Instagram, so here’s all it takes:
You will need:
– 4 chicken breasts (leftovers are great for salads)
– 1 head of cauliflower
– 2 T. parmesan cheese
– 2T. olive oil
– 1tsp. onion powder
– 1tsp. garlic salt
– BBQ Sauce
– your choice of additional spicy sauce, I used Tortuga Sweet Heat Caribbean Pepper Sauce
– nutritional yeast (optional)
1.) Preheat the oven to 400 degrees.
2.) Cook your chicken breast on the grill or in a skillet. I did mine stove-top.
3.) Cut up the cauliflower into bite size pieces and put it in a baking dish. Brush on olive oil, garlic salt and onion powder. Then top with parmesan and nutritional yeast.
4.) Pop the cauliflower, covered with foil, into the oven for 30 minutes.
5.) When your chicken is just about done, cut the breasts in half, into strips and coat with the Spicy BBQ sauce. Continue cooking until it’s done, then plate it.
6.) Take the cauliflower out of the oven, remove the foil, and pop back into the oven for another 30 minutes. The edges of the cauliflower will start to brown and that’s when you’ll know it’s done.
7.) Then plate your cauliflower with the chicken for perfect presentation! I wanted to add some fresh basil to our cauliflower, but ended up just digging in.
It’s literally that easy!
I’ve been getting up early and making eggs for breakfast. I find that the protein holds me over longer in the morning and it’s worth the extra effort. I do 1 full egg, 2 egg whites, veggies and salsa.
I cut up spinach, broccoli and onion earlier in the week and put it in a Tupperware, so that I can just toss it in with the eggs in the morning – no fuss!
Lunches have been leftovers and salads. Today I have a super veg filled salad with leftover chicken and balsamic dressing.
