What a crazy-busy, but good week it’s been thus far.
I’ve been tied up every night and tonight isn’t any different. I’m going to work through my lunch today so that I can leave early and run errands before bootcamp tonight.
Monday I went to FitZone with the girls and we had a ‘Blackout‘ for Stephanie’s birthday, which was fun!
Once I arrived home, I ate a quick dinner and then began cleaning my house and packing everything I needed since I was leaving to visit Dan after work on Tuesday.
I worked out Tuesday during my lunch hour, as usual, and then had the traditional salad afterward.
After work I headed to Dan’s place and we had plans to make a fiesta salad for dinner. It turned out better than I could’ve imagined.
Fiesta Salad with Greek Yogurt-Salsa Dressing
You will need:
– 1 can of black beans
– 1 can of corn
– 1 avocado
– 2 chicken breasts
– 1 cup of mushrooms
– 1/2 cup of onion
– 1 packet of taco seasoning
– a bag of spring mix lettuce
For the dressing:
– salsa of choice
– small container of Fage 0% Greek Yogurt (or your favorite brand)
1.) Start by dumping the can of black beans, liquid and all, into a pan and turn on medium heat. (It takes a bit for the liquid to thicken)
2.) Cook the chicken and cut up into bite size pieces.
3.) Add the raw mushrooms and onion to the black beans.
4.) While everything is cooking, put the lettuce in a bowl and cut up the avocado. I’ve found the best way to cut it up and not make a mess is by cutting it while it’s still in the shell and then removing it by scooping it out with a spoon.
5.) Add the corn and half of the taco seasoning to the bean mixture. Stir and then add the chicken and the rest of the taco seasoning packet.

6.) Let all the flavors marinate together and turn off the heat.
7.) Combine the salsa and greek yogurt – 1:3 ratio – 1 part yogurt and 3 parts salsa.
8.) Place the salad mix on a plate, top with the bean/chicken mix and then put the ‘dressing’ on top.
This salad was out of control good! We skipped cheese, but it didn’t even need it. Another addition that would be good is some tortilla strips, but again that would only add calories and I didn’t need those either. This was another winner and again, boyfriend approved!!
I started today with a Grande Soy Latte, 1 hard-boiled egg and 1/2 of a banana.
Later, I had Vanilla Shakeology with almond milk and cinnamon!
Tonight I’m headed to try out Renegade Fitness with my friend, Kayla. I’m not 100% sure what to expect, but I do know that it could include some TRX, tire flipping, planking, and more…I hope I survive!
