I love ice cream. I love frozen yogurt. I mean, who doesn’t?! What I don’t love is fat grams, calories, and simple carbohydrates.
After seeing this ‘Banana Ice Cream‘ all over Pinterest, I figured I should give it a try.
I let some banana gets over-ripe and then peeled them and cut each one into fourths. I put about four, cut up bananas, into a freezer bag and let them freeze over-night.
The next night, I tossed about 2 cups worth of the frozen bananas into the Vitamix along with almond milk, coconut and peanut butter.
I blended it all together on a medium setting, just to get things moving. Then, I turned it up to high and gave it a stir. I needed to add a little more milk because there were some air bubbles. Eventually everything was incorporated and it turned out super smooth and creamy.
I put it in the freezer afterward to get the perfect texture. It’s so good and a healthier alternative to ice cream and frozen yogurt. I need to make more asap. It should also be noted that it is boyfriend approved!
– 2 frozen bananas
– 3/4 cup almond milk (blend and add more if needed)
Those are the main ingredients, after that you can add anything that sounds appealing to you, keeping in mind, the more you put in the more calories there are, but some ideas include:
– chocolate chips
– graham crackers
– other fruit (strawberries, raspberries, blueberries..)
I used about 1 teaspoon of all natural peanut butter and 1 tablespoon of coconut.
It’s so easy to make, not much clean up and delicious. Give it a try!

We’ve just about made it through another day. Now, onto Hump Day!
