It’s football season. It’s cold. It’s time for comfort food.
The last few Sundays, Ashley and I have cooked meals built for comfort and warmth. Are they healthy? Nope. Would I recommend you eat them more than one night a week? Nope. But…they are delicious and perfect for lazy, hungover, football, Sundays.
Now, you all know I eat healthy 80% of the time and I’m totally cool with a splurge, which is why these meals work for me. It’s all about portion control and eating healthy the rest of the week. So, since we always have these awesome dinners, I decided to create a series out of it in case you’re craving fatty food, too. 😉
Cheesy Potato Soup
You will need:
– 2 c. water
– 1/2 c. butter
– 1/2 c. margarine
– 1/2 c. onion
– 1 c. flour
– 2 c. sharp cheddar
– 4 chicken bouillon cubes
– 6 c. milk
– 4 baby red potatoes
– 2 packages frozen california mixed veg
1.) Chop the potatoes into cubes and microwave for two minutes to pre-cook.
2.) Add 2 cups water and the two packages of veg blend in a pan and cook until soft.
3.) Meanwhile, melt the butter and margarine in a big pan and add the onion. Cook on low until translucent.
