I’m going to start out by saying – holy calorie burn! I knew I needed a hard workout and last night really did it for me. Before I left, I gulped down my Energy & Endurance – this stuff rocks!
As soon as I walked into Turbo, I could feel my focus shift and I went hard the whole time. I wore my heart rate monitor again and it said I burned over 800 calories in Turbo alone. Once Muscle Madness ended, I checked to find that my calories burn far surpassed 1,000 calories. Now, while I know I did burn a lot of calories, I don’t think it was 1,500 as calculated – I always under estimate. So, I logged it in “MyFitnessPal’ as 800, which also was probably a very low estimate.
I was very ready for dinner when I returned and per my ‘Meal Plan‘ I was to have salad with Tilapia. Since I ended up burning so many calories, I added an apple to my meal as well.
Today, I have followed my plan, perfectly!

S: Carrots/Cherry Tomato with Fage ‘Ranch’
L: Chocolate Shakeology
D: Tuna Salad Stuffed Peppers
Ok – now, as promised, Homemade Burrito Bowl, how-to!
You will need:
-tilpia and/or chicken
-1 can black beans
-corn on the cob
First, cook the chicken and tilapia on the grill – for the fish we used blackening seasoning. Nick then roasted the corn on the grill in tin foil to char it a bit.
I made guacamole, which is just a mix of avocado, lime juice, cherry tomatoes, cilantro, red onion, hot sauce, and s+p. You should know by now that I don’t measure, but if you really needed me to, I could guesstimate for you.
For the black beans, instead of rinsing them, we added the whole can with the juice to a sauce pan with cilantro and onion then let it come to a boil and reduce the heat with a lid on – it will thicken and be amazing!
Saute the peppers with a bit of water and taco seasoning until they are tender.
Mix greek yogurt with taco seasoning for your ‘sour cream’!
Once everything is cooked – this is when you can set everything out and start to build! I made mine a salad, but it could be put over rice or a tortilla.
I made mine in this order – lettuce, rice, black beans, corn, peppers, tilapia, salsa, and ‘sour cream’. Um, hello!
This will definitely be a repeat in my house -hope you’ll try it! The best part is that everyone can make it their own and use all the ingredients they like!
