I really wanted to title this post, ‘My Favorite Balls’, but that felt borderline inappropriate.
Anyway, I decided that since I did the cleanse a of couple months ago and you can read about it here,
that I would share recipes and fashion instead. My days right now, eating wise, are – shake, tea, salad, workout, shake! Pretty much sums it up. However, I’ll definitely be posting final results.
This is my favorite dessert recipe via: Mama Pea. Her book, ‘Peas and Thank You’ was recently released and I am on the hunt for it. I have talked about these before but never posted the recipe. They are legit.
Peanut Butter Chocolate Chip Cookie Dough Balls
Prep Time: 40 min
Cook Time: 15 min
-1/2 c. non-dairy margaine (I use Earth Balance)
-3/4 c. natural (creamy) pb
-1/2 c. brown sugar
-3/4 c. powdered sugar
-1/2 t. vanilla extract
-1 t. baking powder
-1/2 t. baking soda
-3/4 t. salt
-1 c. whole wheat pastry flour
-1/2 c. flour
-1/2 c. pb chips
-1/2 c. non-dairy chocolate chips
1.) Preheat oven to 350 degrees.
2.) Using stand mixer or beater, beat margarine, pb, sugars, and vanilla until fully incorporated.
3.) In a separate bowl, combine baking powder, baking soda, salt and flours.
4. Add dry mixture to to wet ingredients a little at a time.
5.) Mix until dough forms
6.) Add your chips.
7.) Combine and chill dough for 30 minutes.
8.) Form dough balls and bake for 10-12 minutes. They’ll look very similar to how they did going in, but don’t over-bake.
Note: You may need to add 1-2 T non-dairy milk. I added Almond Milk because that’s what I had on hand. My dough wasn’t sticking well and this did the trick.
