I made these shells last Saturday and they turned out great. Pasta is a good meal to make when adapting the recipe for vegetarians and meat eaters. I made Eric’s shells with chicken, cheese and broccoli and broccoli and spinach in mine.
You will need:
-1 pound chicken breast
-low fat cottage cheese
-part skim ricotta cheese
-shredded cheese of choice – I used mostly pepper jack

Stuffed Shells: Two Ways – Chicken and Veggie
1. Preheat oven to 375. Boil water for shells.
2. Remove fat from chicken and cut it into smaller pieces. Then, put olive oil in a pan and heat on medium for a few minutes. Put chicken into pan and season it.
5. Keep an eye on the chicken. Flip it. Add more seasonings and cook until it’s golden.
10. Separate the cheese mixtures – (one for chicken one for veggie) and add the remaining ingredients.
I was able to stuff all the shells and still had filling leftover, so I’d advised cutting the recipe in half. Clearly, Eric and I did not polish this batch off – that would be scary. If you are feeding an army or multiple growing boys then this would be an acceptable amount – no idea what I was thinking.
11. Pour sauce over shells.
