How was your weekend? Mine was exactly what I wanted – relaxing, productive, and low key.
Tiffany, one of Ashley’s coaches, came over so we could do a ‘Getting Started Right’ presentation where we showed her the Beachbody website as well as the ‘back office’ where she will do most of her work and keep tabs on her business. We sipped wine and I made Spicy Black Bean Veggie Burgers from scratch – they were awesome.
I’m really bad at measuring ingredients.
I’m the type of person that just throws stuff in and crosses my fingers that it’ll turn out. This is not helpful for you all, I understand this and I am working on it. So rough estimating, into the food processor went:
-2 cans black beans
-3/4 cup whole grain flour
-1.2 cup raw oats
-handful of fresh spinach
-1 T. sunflower seeds
-2 T. Franks Red Hot
-2 T. lemon juice
-1 T. olive oil
-combo of S + P, chili powder, chipotle seasoning
-added at the end: 1/2 can corn
The batch made 7 good size ‘burgers’ and I just cooked them on a skillet until crispy on the outside. Perfection.
Ashley and I woke up and headed to Ann Arbor to hit up the Apple store, Trader Joes and Whole Foods. I made us shakes before we left.
Then it was time to go to Whole Foods – I usually only get a few things here but Ashley has never been so I was excited to show her around.
I got the Hummus Wrap – whole grain tortilla, hummus, carrots, cucumber, red onion and lettuce. It was really good. I wish it wouldn’t have cost $1.50 to substitute a different side. I was already paying $10 for a wrap -so kind of pricey.
I enjoyed every bite of those fries!
As soon as I woke up I completed Fire 55 – one of my favorites- since it was Day 1 of the Turbo Fire 5 Day Inferno.
Afterward, Ashley and I went to Angie’s house to lay out by her pool – perfect way to spend the last day of the weekend. When I got home, I was starving but nothing on the ‘meal plan’ sounded good.
I am NOT good at following meal plans.
I can stay within the calorie range (1200) just fine, but the reason I don’t like meals plans is that I just don’t know what I am going to be craving on that day and time. So, I’ve decided that I’ll take parts from the meal plan each day and try to follow along but I may change it up depending on what I’m feeling. Some people need the guidance of a meal plan and if it works for you, great, I just don’t prefer it!
With that being said, yesterday after the pool, all I wanted was a fruit smoothie – I used ice, strawberries, half banana, skim milk and water. It was heaven.
Today, I woke up and
following along with the meal plan not at all following directions – stopped to get a skinny coconut latte.
