The other day while grocery shopping, I came across, lentils. I have always been curious about them and see them in many vegetarian soups or other various dishes but I always shy away because they are dry and I thought the cooking process would be long. However, unlike dry beans, lentils do not need to soak over night nor do they cook for a long period of time. Another positive of lentils is that they are a great source of protein.
I went ahead and bought some not knowing what I would be doing with them. Then, I had the brilliant idea of using the lentils as the ‘meat’ for Sloppy Joes, aka Faux Joes.
First, measure 1 cup of dry lentils:
Now the fun part…add the ‘Sloppy Joe’ sauce. I just use ‘Manwich’, because it’s easy and I didn’t have the ingredients on hand to make it from scratch. However, if you are feeling frisky, by all means, make your own!
Along with the ‘Joes’ I made some killer Roasted Cauliflower. I simply rubbed the cauliflower in olive oil, sprinkled with salt and pepper and roasted in the oven on 350 degrees for 30 minutes. I can’t wait to make this again – so good.
