Mexican food is easily one of my favorite cuisines. I like making it at home more than ordering it out though. This way, I control what goes into it – restaurants tend to be much more greasy. So, last night I made, Vegetable Enchiladas, which is a frequent dish in our house. They are easy, delicious, and don’t take too long to prepare.
I buy a bag of mixed frozen vegetables (carrot, broccoli, cauliflower) and also a bag of frozen spinach. Thaw it in the microwave and then throw all of it into a pan.
