So, I got my snow day yesterday! It was so nice to sleep in and hang low at home. We were at a Level 3 until about 2pm, which meant my parents and sister were home too. So, my dad and I set out to shovel the driveway and clean off the cars. I am feeling it today. That is such a good workout.
Now, back to that recipe I promised. This is the best Vegetable Lasagna, ever! I adapted it from the recipe that Kath has over @ her blog. (katheats.com)
You will need:
-Whole grain lasagna noodles, low fat cottage cheese, pasta sauce, shredded mozzarella, grated parmesan and veggies of choice (I used carrots, mushrooms, red pepper, spinach and you will need zucchini for one layer of ‘noodles’)
Best part – you don’t have to cook the noodles. Just spray a non stick pan and layer the bottom with the uncooked noodles. Then, layer the pasta sauce as well as the cottage cheese which you mix with the parmesan.
Ok, now the fun part. Instead of using regular noodles again, you will use the ‘zucchini noodles’. Just slice the zucchini lengthwise to create the necessary shape! Here is a picture showing how both will be layered but you would usually do a full covering with each one!
So, now after you have the zucchini layer do another sauce/cottage cheese layer, more vegetable, top with whole grain noodles and repeat. Top the whole thing with shredded mozzarella and stick in the 400 degree oven for one hour!
