Happy Hump Day everyone! I started my morning with a bang and got my Turbo workout over with. I am so happy to know that its done and that will set me up to make healthy decisions the rest of the day!
Last night I decided to put together a recipe post. I made one of my favorite dinners, Roasted Vegetables & Goat Cheese Wraps. First, I preheated the oven to 325 degrees and began to prep my vegetables. I typically use whatever I have on hand, so this time I used a green pepper, red pepper and mushrooms.
While they were cooking I gathered the rest of my ingredients for my wrap. I decided to bump up the protein by adding black beans and mushed them slightly with a fork to make them spreadable. I also needed the goat cheese, spinach and chipotle mayo. For the mayo, I used the, ‘Pampered Chef Chipotle Seasoning’ but you can also use, Chipotle in Adobo Sauce and put it in the food processor with, Olive Oil Mayonnaise.
It was a delicious and satisfying meal. The wrap included all of my favorite ingredients, especially the goat cheese, and I didn’t need a ton of it to be satisfied! Hope you will try this recipe.
